| Instructions: |

Sift flour, then resift with salt. Make a well in dry ingredients. |

Blend eggs with milk, water, and vanilla or lemon zest. |

Pour the wet ingredients into the well in the dry ingredients; combine with a few strokes. Do not overbeat. Cover and let rest, refrigerated, for up to 6 hours. |

Grease a 5-inch sloping nonstick pan with a few drops of oil or clarified butter. Add a small amount of batter, about 2 tablespoons. Tilt pan so batter covers bottom completely. Cook over medium heat until light brown on the bottom. Flip crêpe and cook on other side until light brown. Transfer crêpe to a plate. Finish with remaining batter. |
