Chinese Duck Soup
Don't throw away the duck! Instead, use the leftover bones, duck skin, and meat to make this broth, aromatically seasoned with star anise and five-spice powder. For a first course or even main meal, add lightly steamed vegetables or julienned, seared duck breast to the soup.

1 Roasted duck carcass, including any leftover meat, skin, or giblets
1/4 cup(s) Cooking rice wine
2 slice(s) Ginger, minced
2 teaspoon(s) Star anise
2 Green onions, chopped
1 teaspoon(s) Salt


Instructions:
1. Chop duck into small pieces and place in a large pot with stock, soy sauce, wine, ginger, star anise, green onions, and salt. Bring to a boil, then simmer uncovered over low to moderate heat for 2; to 3 hours.
2. Strain stock, then return to pot. Add five-spice powder and sugar and simmer another 20 minutes. Chill and skim. Reheat to serve.
