Anchovy Fusilli
This quick and easy pasta dish is a taste of the Mediterranean. It features a simple sauce of anchovies cooked to a flavorful puree with garlic and olive oil, then combined with capers, olives, and fresh herbs, and tossed with fusilli pasta. Serve with salad and crusty Italian bread. Or serve small portions as a starter. Any type of short pasta can be substituted, especially farfalle.

1 pound(s) Fusilli pasta
1 tablespoon(s) Garlic, crushed
6 Anchovy fillets, finely chopped
4 Fresh mint leaves, finely chopped
1/4 cup(s) Fresh parsley, chopped
1 cup(s) Kalamata olives, pitted
to taste Pepper


Instructions:
1. Bring a large amount of salted water to a boil. Add fusilli and cook until al dente; drain and reserve.
2. Heat oil and sauté garlic until golden; discard garlic. Add anchovies to oil and cook, mashing them into a paste.
3. Remove pan from heat. Combine anchovies with mint, parsley, capers, olives, and pepper. Toss with cooked fusilli pasta.
