Linguine with Sweet Red Pepper Sauce
Sweet red and yellow peppers roasted until tender and flavorful are used as the basis for this simple pasta sauce tossed with linguine. Any long pasta can be substituted for the linguine, such as fettuccine or spaghetti.

1 Onion, medium, coarsely chopped
3 clove(s) Garlic
1 1/4 cup(s) Roasted red peppers
1 1/4 cup(s) Roasted yellow peppers
1/2 cup(s) Water
to taste Black pepper
1/4 cup(s) Heavy cream, warmed


Instructions:
1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain noodles, dress with a little olive oil, and reserve in a warmed serving bowl.
2. Heat oil, and onion. Saut; until translucent. Add garlic and continue saut;ing until fragrant. Add the peppers, water, and salt and pepper to taste. Cook over very low heat until peppers begin to fall apart.
3. Pass the mixture through a sieve or the fine disk of a food mill. Add the warmed cream and stir. Keep the sauce warm.
4. Toss hot sauce with pasta. If desired, toss in a saut; pan to warm; serve at once.
