Herb-Stuffed French Bread
In France, a meal without bread is like a parade without music. It is eaten every day, fresh from the baker's shop. While most of the time the baguette is served unembellished, Provençals like to enhance it with fresh herbs. To vary the flavor, you may use your choice of herbs.

1 French baguette
1/4 cup(s) Olive oil or herb-flavored oil
1 cup(s) Scallions, finely chopped
3/4 cup(s) Parsley, finely chopped
to taste Sea salt
to taste Black pepper, freshly ground


Instructions:
1. Preheat oven to 400;F.
2. Split baguette lengthwise in ;, but do not cut through, leaving it hinged on 1 side.
3. Heat oil in a saucepan. Add scallions, parsley, salt, and pepper.
4. Cook, stirring, until scallions are wilted. Spoon the filling onto ; of the baguette. Cover with the second side, sandwich fashion.
5. Wrap the bread tightly in foil and bake about 10 minutes
