Crispy Garlic Chicken
Classic Chinese flavors are captured in this marinated chicken dish. Serve chicken over rice, with seasoned soy sauce.

1 tablespoon(s) Shaoxing cooking wine
1/2 cup(s) Soy sauce, for marinade
1/2 tablespoon(s) Sugar
1/2 teaspoon(s) Five-spice powder
1 1/3 pound(s) Chicken, boneless, cut into 2-inch pieces
1 Egg yolk
6 tablespoon(s) Sweet potato powder
1 tablespoon(s) Soy sauce, for dipping sauce
1 teaspoon(s) Ginger, minced


Instructions:
1. Combine 1/2 teaspoon minced garlic, Shaoxing, soy sauce, sugar, salt, and five-spice powder to make a marinade.
2. Add chicken and marinate for 3 hours in the refrigerator.
3. Combine egg yolk and cornstarch. Coat chicken with cornstarch, then roll in sweet potato powder.
4. Heat oil over a high flame until 375;F. Add chicken pieces and deep-fry until all sides are golden-brown (total cooking time should be about 4 minutes).
5. Remove chicken with a slotted spoon and drain on paper towels.
6. In a small bowl, combine soy sauce, 1/2 teaspoon minced garlic, and ginger.
7. Serve chicken with sauce.
