Rustic Pasta Shells with Sausage and Peas
This rustic pasta dish infuses a rich flavor into a basic tomato sauce with the addition of spicy Italian sausages simmered in white wine. For a simpler vegetarian dish, omit the sausage. Preparation hint: Brown the sausage in a little butter or oil for better flavor and texture.

1 pound(s) Conchiglie pasta
2 tablespoon(s) Butter
1 Onion, chopped
1 teaspoon(s) Garlic, minced
14 ounce(s) Italian plum tomatoes, canned, chopped
to taste Black pepper, freshly ground
1/2 pound(s) Hot Italian sausage
1 cup(s) Green peas, frozen


Instructions:
1. Bring large pot of salted water to a boil. Add pasta and cook until al dente; drain and reserve.
2. Melt butter in a heavy saucepan. Add onion and saut; until translucent; add garlic and continue saut;ing until aromatic.
3. Add tomatoes and juice; season with salt and pepper; simmer for about 20 minutes. Skin the sausages and slice into rounds. Add sausage and peas to tomato sauce. Simmer briefly until peas are just hot.
4. Toss sauce with pasta.
