Tomato and Tuna Linguine
This simple pasta dish is a perfect example of pantry improvisation, using canned plum tomatoes, tuna in oil, and capers. You can replace the linguine with any long pasta, especially spaghetti.

1 Onion, chopped
1 teaspoon(s) Garlic, minced
14 ounce(s) Italian plum tomatoes, canned
to taste Black Pepper, freshly ground
3 tablespoon(s) Fresh parsley, chopped
1 tablespoon(s) Lemon zest, grated


Instructions:
1. In a large pot, boil salted water. Add pasta and cook until al dente. Drain pasta, dress with a little olive oil, and set aside.
2. Heat 2 tablespoons oil in a large skillet. Add onion and saut; until translucent. Add garlic and continue saut;ing until aromatic.
3. Add tomatoes with juice, and season with salt and pepper; cook on high heat for about 10 minutes.
4. Pur;e mixture and return to pan. Add tuna and capers and continue cooking for 10 minutes more.
5. Dress pasta with sauce, and garnish with parsley and lemon zest.
