| This simple pasta dish is a perfect example of pantry improvisation, using canned plum tomatoes, tuna in oil, and capers. You can replace the linguine with any long pasta, especially spaghetti. |

In a large pot, boil salted water. Add pasta and cook until al dente. Drain pasta, dress with a little olive oil, and set aside. |

Heat 2 tablespoons oil in a large skillet. Add onion and saut; until translucent. Add garlic and continue saut;ing until aromatic. |

Add tomatoes with juice, and season with salt and pepper; cook on high heat for about 10 minutes. |

Pur;e mixture and return to pan. Add tuna and capers and continue cooking for 10 minutes more. |
| 5. |
Dress pasta with sauce, and garnish with parsley and lemon zest. |
