| Full-flavored and easy to prepare, this simple salad is a bold mix of red onion, parsley, and tangy/fruity sumac berries. Serve this salad with Slow-Roasted Lamb with Pomegranate Glaze followed by Fresh Cheese with Chestnut Honey (see recipes). Preparation hint: Don't omit salting the onions; this step softens the onion flavor and tenderizes the flesh. |

Thinly slice the onions and toss with 1 teaspoon coarse salt. Rub the salt into the strands and let stand 5 minutes. |
