Pomegranate Chicken
This recipe combines sweet, tart pomegranate molasses with warm spices like cumin, clove, and cinnamon for an elegant chicken dish. Serve with your choice of sautéed fresh vegetable and a starch; spinach and rice are good choices.

3 1/2 pound(s) Chicken, whole, cut into serving pieces
1/4 teaspoon(s) Cloves, ground
1 teaspoon(s) White peppercorns
1/8 teaspoon(s) Cinnamon
4 teaspoon(s) Garlic, minced
1/2 cup Pomegranate molasses
2 tablespoon(s) Extra-virgin olive oil


Instructions:
1. Season chicken with salt; reserve.
2. In a mortar and pestle or food processor, mash the cumin, cloves, peppercorns, nutmeg, cinnamon, and garlic to a paste. Stir in the pomegranate molasses and oil.
3. Marinate the chicken pieces with the sauce in a shallow bowl for 2 hours.
4. Transfer the chicken with its marinade to a roasting pan and pour ; cup chicken stock into the pan. Roast at 350;F for about 45 minutes, adding more stock as necessary.
