Korean Beef
A savory grill of beef sirloin steeped in a heady marinade. When garnished with Asian pear and crunchy peanuts and served in lettuce cups, Korean beef is a true textural treat. Serve as the main course to a Korean meal, accompanied by Asparagus Korean Style (see recipe). Preparation time does not reflect 3-hour marinade.

3 pound(s) Beef sirloin, sliced 1/4-inch thick
MARINADE:
1/4 teaspoon(s) Gochu-karu (red pepper flakes)
1 tablespoon(s) Fresh ginger, peeled and minced
4 Scallions, finely chopped
3 tablespoon(s) Firmly packed brown sugar
2 tablespoon(s) Mirin
DIPPING SAUCE:
1 clove(s) Garlic, minced
1 teaspoon(s) Ginger, minced


Instructions:
1. Trim fat from beef and place in a zip-lock bag; reserve.
2. Meanwhile, in a bowl, combine all marinade ingredients. Mix well and pour into the zip-lock bag with the beef; toss to coat.
3. Marinate in the refrigerator for at least 3 hours or overnight.
4. Preheat a grill until hot.
5. Grill beef over high heat until well seared, about 1–2 minutes per side.
6. For the sauce, combine all ingredients and mix well.
7. Serve in lettuce cups with chopped peanuts, diced Asian pears, and dipping sauce.
