| Instructions: |

Heat wok over highest possible heat until smoking-hot. Add oil and heat until smoking. Add eggs, and cook, stirring constantly for about 10 seconds, until eggs puff and begin to set. |

Working quickly, add onion and then the ham, cooking for about 30 seconds, until onions turn translucent and ingredients are well-coated with oil. |

Add rice and continue cooking, using the back of a spatula to break up any clumps. |
| 4. |
Add salt and pepper, and continue stir-frying for 3–5 minutes, until heated through. |
| 5. |
Adjust seasoning to taste. |

Add peas and scallions, and continue stir-frying for 1–2 minutes, until scallions are fragrant. |
| 7. |
Serve immediately. |
