Ming Tsai's Grilled Vegetable Slaw
Chef Ming Tsai's grilled slaw is a great alternative to the usual. Eggplant, carrot, red onion, and zucchini are grilled and tossed with olive oil and lemon juice. Serve this slaw with Asian Barbecue and Grilled Potatoes. Top off the summertime feast with a refreshing glass of beer.

1 Eggplant, medium, 1/4-inch lengthwise slices
1 Zucchini, large, 1/4-inch lengthwise slices
1 Red onion, large, 1/4-inch rings
1 Carrot, large, peeled, 1/4-inch lengthwise slices
1/4 cup(s) Extra-virgin olive oil
to taste Black pepper
2 Juice from fresh lemons


Instructions:
1. In a large bowl, toss all vegetables with olive oil and season with salt and pepper.
2. Place vegetables on a hot, oiled grill and cook until crisp-tender.
3. Reserve until cool.
4. Toss with juice and adjust seasoning, if necessary.
