| Rice is the staple diet of a South Indian. The process of converting rice is actually called parboiling. During this process the nutrients are driven into the center of the rice grain, and the surface is hardened to prevent loss of nutrients during the polishing process. It is amber in color after polishing but turns white after cooking. Excellent for making plain rice, lemon rice, and tomato rice. |
