Hummus
This Middle Eastern dip is made from chickpeas and tahini, lemon, olive oil, and garlic. While its garnishes may vary, we've topped ours with red onion, olives, parsley, olive oil, and sumac, a tart powder made from ground berries native to the Mediterranean. Serve with warm pita bread. To create a signature hummus, add pesto, roasted piquillo peppers, or cilantro.

2 can(s) Chickpeas, canned
3 tablespoon(s) Garlic, minced
1/2 cup(s) Lemon juice
1/4 cup(s) Extra-virgin olive oil
Garnish:
Red onion, minced
Sumac
Parsley, fresh, chopped
Warmed pita bread, for accompaniment


Instructions:
1. Drain chickpeas, saving ; cup of the liquid.
2. In a food processor fitted with a metal blade, process the chickpeas, garlic, lemon juice, olive oil, and reserved liquid until smooth. Season with salt.
3. Transfer the mixture to a bowl and stir in tahini to make a smooth paste. Adjust the seasoning with salt and lemon juice, to taste.
4. Garnish with red onions, olives, sumac, parsley, and additional olive oil.
5. Serve with warmed pita bread.
