Kalamarakia Kypriotika (Spiced Calamari, Cyprus Style)
A light Mediterranean appetizer of sautéed onions and calamari, braised in red wine. Serve with crusty bread. Preparation hint: For a delicate result and texture, slice calamari into very thin rings; leave tentacles whole.

2 tablespoon(s) Olive oil
1 pound(s) Small calamari, including tentacles; cleaned
3 Onions, sliced into rings
2 tablespoon(s) Cloves
1 Bay leaf
1/2 cup(s) Dry red wine


Instructions:
1. Heat oil in a skillet. Add calamari and onions and saut; until onions are translucent. Add remaining ingredients, and enough water to almost cover the squid.
2. Simmered, uncovered, until the calamari are tender and all of the wine has been absorbed, approximately 1 hour.
3. Remove spices and bay leaf. Serve warm or cold.
