Beef Adobo with Coconut Milk
Adobo, the classic dish of the Philippines, is also a style of cooking meat, poultry, or fish in vinegar, garlic, soy sauce, and peppercorns. There are many variations. This one adds coconut milk and uses a traditional Philippine cane vinegar. Serve with rice.

1/2 cup(s) Cane vinegar
1/2 cup(s) Beef stock
2 clove(s) Garlic, minced
1 teaspoon(s) Black peppercorn, whole
1 teaspoon(s) Ginger, julienned
2 pound(s) Boneless beef chuck, cut into 2-inch cubes
2 Jalapeno peppers, whole
4 cup(s) Cooked rice, for accompaniment


Instructions:
1. In a heavy pot, combine vinegar, stock, garlic, peppercorns, salt, ginger, and beef; bring to a boil.
2. For medium or hot spiciness, add the jalapenos at this point. For mild spiciness, add it during the last 10 minutes of cooking.
3. Lower the heat and simmer, covered, for 1 hour, or until beef is tender.
4. Add the coconut milk and continue simmering, uncovered, another 10-15 minutes, or until the sauce has thickened.
5. Adjust seasoning, and serve over rice.
