Manzanilla Tapenade
This tapenade is a thick paste made with olives, capers, and garlic, blended with sweet and fruity Spanish manzanilla olives, and seasoned with lemon juice and fresh basil. Spread on toasted French or Italian bread brushed with olive oil. Substitute Spanish piquillo peppers for an interesting alternative to pimentos. Dried basil also works well.

1 1/2 cup(s) Manzanilla olives, pitted
2 teaspoon(s) Garlic, minced
1 teaspoon(s) Lemon juice
3 tablespoon(s) Fresh basil leaves, chopped
to taste Pepper
1/4 cup(s) Chopped pimentos, as garnish


Instructions:
1. In a food processor, combine olives, garlic, and capers. Process until just smooth. With the motor running, slowly drizzle in cup olive oil and lemon juice and process until well combined.
2. Transfer the mixture to a bowl and fold in the basil and pepper. Let rest for about an hour for flavors to mingle.
3. Garnish with pimento.
