In a heavy pot, heat half the oil and saut; onion until translucent; add garlic and ginger and saut; until lightly browned. Remove and reserve. |

Add remaining oil. Add chicken in batches and saut;until lightly brown. Add reserved garlic mixture. |
| 3. |
Add water and bring to a boil. Lower heat and simmer, partially covered, until chicken is very tender, about 30 minutes. |
| 4. |
Add papaya and continue simmering until tender. |
| 5. |
Add spinach and stir. Add fish sauce and pepper to taste. |
