Chicken Tinola (Chicken Ginger Soup)
Chicken Tinola is a simple, light chicken soup from the Philippines that combines sweet-spicy ginger and sweet papaya with the subtle flavor and delicate texture of fresh spinach. Preparation hint: Fresh spinach is often sandy; be sure to wash and rinse the leaves thoroughly.

4 tablespoon(s) Vegetable oil
1 Onion, sliced
2 teaspoon(s) Garlic, minced
1 tablespoon(s) Ginger, minced
1 Chicken, cut into 8 pieces
1 quart(s) Water
2 cup(s) Green papaya, peeled and cubed
1/2 cup(s) Fresh spinach, cleaned, tough stems removed, cut into 2-inch strips
to taste Black pepper, freshly ground


Instructions:
1. In a heavy pot, heat half the oil and saut; onion until translucent; add garlic and ginger and saut; until lightly browned. Remove and reserve.
2. Add remaining oil. Add chicken in batches and saut;until lightly brown. Add reserved garlic mixture.
3. Add water and bring to a boil. Lower heat and simmer, partially covered, until chicken is very tender, about 30 minutes.
4. Add papaya and continue simmering until tender.
5. Add spinach and stir. Add fish sauce and pepper to taste.
