Kare Kare (Meat and Vegetable Stew)
A typical dish of the Philippines, Kare Kare combines oxtails with roasted and ground rice and a variety of vegetables, including banana blossom, all simmered in a rich peanut sauce. This hearty dish is traditionally served as a holiday feast or special Sunday meal.

5 pound(s) Oxtails
3 tablespoon(s) Vegetable oil
2 Onions, large, finely chopped
1 tablespoon(s) Garlic, minced
8 cup(s) Beef stock
to taste Pepper
4 tablespoon(s) Medium-grain white rice
4 tablespoon(s) Roasted peanuts, crushed
1 Banana blossom, sliced into thin strips
1/2 pound(s) Green beans
1/2 pound(s) Eggplant, cubed
3 Green onions, sliced
4 cup(s) Rice, cooked, for accompaniment


Instructions:
1. Trim excess fat from oxtails and cut joints into segments. Season with salt on all sides.
2. Heat oil in a large, heavy pan. Add meat and brown on all sides in batches, making sure not to overcrowd pan; transfer to plate and reserve.
3. Return pan to heat, add onions and garlic, stirring occasionally until soft. Return meat to pan and add stock and pepper. Bring to a boil, cover, lower heat, and simmer until tender, about 2 hours.
4. Meanwhile, prepare roasted, ground rice: Toast rice grains in a dry skillet until golden-brown. Pound in a mortar and pestle or blend in a blender until ground; sift out any large pieces.
5. Combine rice with crushed peanuts, banana blossom, green beans, and eggplant; add to stew. Continue simmering until vegetables are tender and the gravy is thick. Add fish sauce to taste (begin with 2 tablespoons).
6. Garnish with green onions and serve with rice.
