Kartoffelsalat (Potato Salad)
Hold the mayo! This authentic Bavarian potato salad combines vinegar, bacon, and beef stock for a piquant, sour/smoky flavor. Serve with any grilled or roasted meat. Be careful not to overcook potatoes. Preparation hint: For added flavor and texture, leave skins on potatoes.

2 pound(s) Russet potatoes
4 tablespoon(s) Bacon, chopped
1 cup(s) Beef stock
1 Onion, chopped
to taste Black pepper, ground


Instructions:
1. In a large saucepot, cook potatoes until tender; cool, peel, and slice.
2. Meanwhile, saut; the bacon slowly, to render the fat. Remove bacon, cool, and chop; reserve fat and chopped bacon.
3. Dress potatoes with bacon fat and vinegar; add stock, onion, and seasonings.
4. Mix carefully and let stand for several hours before serving. Garnish with chopped bacon.
