Nuoc Cham (Spicy Fish Sauce)
This essential Vietnamese dipping sauce is based on nuoc mam (fish sauce), plus lime juice, sugar, garlic, and chile flakes for extra heat. Serve as a dipping sauce for Cha Gio, Vietnamese spring rolls (see recipe). Or use as a spicy, all-purpose Southeast Asian seasoning.

1 clove(s) Garlic, chopped
2 Red chile peppers, fresh, seeded and minced
2 tablespoon(s) Sugar
1 tablespoon(s) Rice vinegar
1/4 cup(s) Water


Instructions:
1. Using a mortar and pestle, pound the garlic, chiles, and sugar.
2. Add the lime juice, vinegar, fish sauce, and water. Mix well.
3. Serve in a small bowl and use as a dipping sauce for Asian appetizers.
