Chow Spice Mixture
This staple seasoning for many Ethiopian dishes combines garlic, ginger, chiles, turmeric, mustard seeds, cardamom, and caraway seeds, blended to a smooth paste. Like many ethnic spice blends, variations of chow occur from kitchen to kitchen. So feel free to experiment with the balance of ingredients to suit your taste.

Instructions:
1. Using a mortar and pestle or spice grinder, process all ingredients into a smooth, thick mixture.
2. Refrigerate mixture in a jar with a tight-fitting lid.
