Yemiser W'et (Spicy Lentil Stew)
This is a classic example of a spicy Ethiopian stew. Built from essential Berbere (a spiced paste) and Niter Kebbeh (spiced clarified butter), this lentil stew is hearty and flavorful. Traditionally served with injera, a spongy Ethiopian flat bread that sometimes resembles a snowy white folded napkin. You can also serve this with pita or any other flat bread.

1 cup(s) Brown lentils, dried
1 cup(s) Onions, finely chopped
1/4 cup(s) Niter Kebbeh Spiced Butter (see recipe)
1 tablespoon(s) Berbere spice mixture (see recipe)
2 cup(s) Tomatoes, canned, finely chopped
1/4 cup(s) Tomato paste
3 cup(s) Water
1 cup(s) Grean peas, frozen
to taste Pepper


Instructions:
1. Rinse lentils. Bring lentils to a boil in water. Reduce heat to a simmer. Simmer 30 minutes, or until lentils are tender.
2. Meanwhile, sauté the onions and garlic in the spiced butter until the onions are translucent. Add the berbere, cumin, and paprika and sauté for a few minutes more, stirring occasionally to prevent burning.
3. Mix in the chopped tomatoes and tomato paste and simmer for another 10 to 15 minutes. Add water and continue simmering.
4. When the lentils are cooked, drain and combine with the sauce mixture. Add peas and cook another 5 minutes. Season with salt and pepper, to taste.
