| This is a classic example of a spicy Ethiopian stew. Built from essential Berbere (a spiced paste) and Niter Kebbeh (spiced clarified butter), this lentil stew is hearty and flavorful. Traditionally served with injera, a spongy Ethiopian flat bread that sometimes resembles a snowy white folded napkin. You can also serve this with pita or any other flat bread. |

Rinse lentils. Bring lentils to a boil in water. Reduce heat to a simmer. Simmer 30 minutes, or until lentils are tender. |

Meanwhile, sauté the onions and garlic in the spiced butter until the onions are translucent. Add the berbere, cumin, and paprika and sauté for a few minutes more, stirring occasionally to prevent burning. |

Mix in the chopped tomatoes and tomato paste and simmer for another 10 to 15 minutes. Add water and continue simmering. |
| 4. |
When the lentils are cooked, drain and combine with the sauce mixture. Add peas and cook another 5 minutes. Season with salt and pepper, to taste. |
