Philippine Chicken Stew
Stews of many varieties are found throughout Philippine cuisine. The addition of cane vinegar lends an authentic note and a powerful, sweet and sour tang. Serve stew with potatoes or rice.

1/2 cup(s) Onion, minced
1 1/2 tablespoon(s) Garlic, minced
1 cup(s) Tomatoes, canned, chopped
3 1/2 pound(s) Chicken thighs, skinned
1 tablespoon(s) Black peppercorns
Pepper, ground
2 Bay leaves
1/4 cup(s) Vinegar
3 cup(s) Water

Instructions:
1. In a large saucepan, heat oil and saut; onion until translucent. Add garlic and cook until fragrant. Add tomatoes. Bring to a simmer and cook until tomatoes are soft.
2. Add chicken, peppercorns, ground pepper, bay leaves, vinegar, paprika, water, and salt to taste.
3. Simmer until meat is tender, about 40 minutes.
