A member of the mandarin orange family, these tiny clementines have a light, tangy sweetness. Packed in a light syrup, these orange segments are natural additions to fruit salads, desserts, and savory sauces. Add clementines to a rich sauce Bigarade, made from reduced red wine vinegar, duck stock, and veal stock, garnished with oranges, and orange zest; serve over roast, glazed duckling.
