Also known as bulghur or cracked wheat, burghol is wheat with its husk removed, which has been steamed, dried, and crushed. Burghol is used extensively in Middle Eastern dishes, and is featured prominently in the traditional dish, kibbeh. This medium coarse-grained burghol has a nutty flavor and a chewy texture. Good for salads, pilafs, and soup, add to strongly flavored, brothy soups, or use in place of rice in pilafs and casseroles.
