Zattar (or zahtar) is a fragrant spice blend made of dried thyme, toasted sesame seeds, and ground sumac (a fruity, sour berry). It's often used in the Middle East to season meats and vegetables, or mixed with oil as a spread for bread. It combines powerful herb and sweet nutty flavors, with a mildly tart bite. Mix with olive oil and spread over bread; sprinkle over kebabs or any savory, rich meat.
