This staple of eastern-Mediterranean kitchens (also called pomegranate concentrate) is made from the reduced juice of fresh pomegranates, providing a huge time-savings from the laborious task of working with the fresh fruit. A little bit of this thick, tangy syrup goes a long way. Add to salad dressings, use in meat glazes or sauces, to tenderize lamb and pork, or swirl it over ice cream.
