This spaghetti is from an old-style, family-run business. Durum wheat semolina is worked with water into dough and passed through a bronze mold, then slowly dried. The resulting spaghetti has a porous surface great for absorbing sauce. Serve with pesto, tomato sauce, or made spaghetti carbonara.
