These are fine, long noodles known as vermicelli or 'sevian'. They are made of wheat flour and are lightly roasted, giving them a reddish brown color. The vermicelli is cooked with milk, sugar, saffron, raisins and nuts to make a traditional sweet treat popular across India and a specialty during Muslim festivals.
